How to Prepare Kefir Milk from Kefir Grains

Kefir grains are small, soft, cauliflower-like clusters containing beneficial bacteria and yeast. When added to milk, they ferment the milk and turn it into kefir, a probiotic drink that is very good for digestion and gut health. Kefir grain are availble at Amaltas store located at PAF Market, Lahore Cantt. Its price is around 1800 PKR. Please don't buy it online. 

What You Need

  • 1 tablespoon kefir grains
  • 1 cup milk (cow or buffalo milk works well)
  • A clean glass jar
  • A plastic or wooden spoon
  • A cloth or loose lid to cover the jar
  • A plastic strainer

(Avoid metal utensils if possible, as they may damage the grains.)

Step-by-Step Method

1. Put grains in a jar
Place 1 tablespoon of kefir grains in a clean glass jar.

2. Add milk
Pour about 1 cup of milk over the grains.

3. Cover the jar
Cover the jar with a cloth or loose lid so air can pass but dust and insects cannot enter.

4. Leave at room temperature
Keep the jar at room temperature for 18–24 hours. During this time, the grains will ferment the milk.

5. Strain the kefir
After fermentation, stir gently and strain the liquid through a plastic strainer.
The liquid is kefir milk, ready to drink.

6. Reuse the grains
The grains left in the strainer can be put into fresh milk again to start the next batch.

Taste and Storage

  • Kefir tastes slightly sour and creamy, similar to yogurt but thinner.
  • It can be drunk plain or mixed with fruit, honey, or a little salt.
  • Store prepared kefir in the refrigerator and consume within 2–3 days.

Important Tips

  • If fermentation continues too long, the kefir becomes very sour and may separate. This is normal but shorter fermentation gives a milder taste.
  • Kefir grains grow and multiply, so you can share extra grains with friends.
  • If you are not using the grains for a few days, keep them in milk in the refrigerator
