HOW TO PREPARE KEFIR MILK

You may buy ‘active milk kefir grains’ from supermarkets or from Amaltas store located in PAF Market, Lahore Cantt. It is available online as well, but that is not dependable because kefir grains die if heated beyond 37 C. You may try KefirBuy.com

What you need:

  • 1–2 teaspoons kefir grains
  • 1 cup (200–250 ml) fresh milk
    (full-fat works best; cow or buffalo milk is fine)
  • Glass jar
  • Plastic or stainless-steel strainer
  • Breathable cover (cloth/tissue paper / loose lid)

Step-by-step method

1.    Add grains to jar

Put kefir grains in a clean glass jar.

2.    Add milk

Pour milk over the grains.
Ratio for beginners:

  • 1 tsp grains → 1 cup milk

Don’t fill the jar — leave some space.


3.    Cover loosely

  • Cover with a cloth or paper towel or
  • Keep lid loose (do NOT seal airtight)

Kefir needs to breathe.


4.    Ferment

Place the jar:

  • At room temperature
  • Away from sunlight

Time: 18–24 hours

In Lahore's weather, often 16–20 hours is enough.

You’ll notice:

  • Slight thickening
  • Mild sour smell
  • Sometimes separation (whey at the bottom — normal)

5.    Strain

  • Pour contents through a strainer
  • Collect the kefir milk
  • Grains remain in the strainer

 Do not wash grains with tap water.


6.    Reuse grains immediately

Put grains back into a clean jar
Add fresh milk again
Repeat daily.

Best: full-fat pasteurized milk

Boiled milk (must be fully cooled)

  • Ideal: 20–28°C
  • Too cold → slow fermentation
  • Too hot → sour quickly

How much to drink

Start gently:

  • 50–100 ml daily
  • After 5–7 days, → can increase slowly

This avoids gas or bowel irritation.

Put grains in:

  • Small jar
  • Covered with milk
  • Refrigerate

Change milk every 5–7 days.


To gift kefir grains

  • Put grains in milk
  • Tight lid
  • Refrigerate
  • Use within 5–7 days
